At Honolulu Fish Company each fish is chosen with great care by sashimi experts – hand-selected and inspected personally in the early morning hours at the Honolulu fish market to ensure it meets company standards. HFC does not condone net fishing, as this destroys the natural habitat; and all fish are exclusively hook-caught. The company does not allow its buyers to purchase fish that have not reached reproductive maturity.
