Branzino is well know for its brilliant and rich taste. The oil in Branzino is slightly more resilient to cooking giving the cooked flesh higher moisture. The raw flesh is pink to cream color and is softer firmness. Branzino will cook up to softer white flesh that is excellent for saute or pan fry.
